Cooking With Oils – An Overview

Just about everybody knows the types of foods to eat to improve ones health, although the way we cook the food can be as just as important. With there being so many oils and butter products claiming to be the best, it can be quite difficult to know which ones to use and which ones you should avoid.

1. Canola oil is a popular oil, and many physicians are claiming that it has the ability to lower the risk of heart disease. The oil is low in saturated fat, and high in monounsaturated fat, and it offers the best fatty acid composition when compared to other oils on the market.

Baked Clams

You will need 2 doz. clams
4 tbsp. olive oil
2 cloves garlic, minced
1 med. onion, chopped
1 tbsp. bread crumbs
1 tsp. parsley or chives
1/4 tsp. oregano
Salt & pepper
Grated Parmesan cheese
Lemon juice

Scrub clams with stiff brush under cold water until all grit is removed.  Saute onion and garlic until golden. Remove clams from shell (steam open). Chop up clams very fine, mix with bread crumbs, parsley, salt, pepper and oregano. Fill shells. Sprinkle with cheese and lemon juice. Dot with low fat butter and place under hot broiler for about 5 minutes.

Red Hot Cucumbers

You will need 2 gal. cucumbers
2 c. delime
8 1/2 qts. water

Peel, slice and core cucumbers. Mix cucumbers in this. Let stand 24 hours. Drain rings and wash in cool water. Pour cold water over rings and soak 3 hours. 

Drain and add: 1 c. vinegar
1 tbsp. alum
1 sm. bottle of red food coloring

Add water to cover.  Heat and simmer 2 hours.  Drain. 

Put: 2 c. cider vinegar
2 c. water
1 pkg. (13 or 16 oz.) red hots
10 c. sugar
8 sticks cinnamon

Dilled Zucchini

Cut 2 unpared medium zucchini lengthwise in half. Cook, covered in 1 inch boiling salted water 12 to 15 minutes or until tender, drain. Brush with melted low fat butter and sprinkle with dill weed. Makes 4 servings.
